my daughter asked if i would bake the rainbow layer cake with coconut on top…didn’t even know where it was from! (she had a picture on her computer sent from a friend) googled it…found one that was adapted from a dorie greenspan book…i think?!
i will try it next weekend.
because she asked me to.
and i have not been baking at all.
maybe it’ll even be fun.
and even if (when!) the cake is a complete disaster, at least she will see my attempt.
good enough!

You can do it! You are a really good mom!
be sure you use gel food coloring. it will be brighter than liquid food coloring.
Give it a try, Jenn. And if it fails ask Alexis to make it for you. Make sure that you post the pictures!
That is sweet! Please post pics of your baking like Alexis does 🙂
There is a website called ‘I am Baker’ and she made a rainbow cake and instructions on her site. Good luck!
This is the first time I’ve commented on your side of the blog. I’m sure you can make that cake. Just remember, every rainbow is a little different. That’s what makes them special. Wanted to ask—“How is your daughter’s leg”? Happy baking—
jen, the cake will turn out great, i am certain. we are not all alexis’ or martha. and you certainly know they mess up from time to time. please port pics. 🙂
It’s really simple to make. The recipe is found on Family Fun magazine website.
Perhaps you should have Alexis make it.
I think the first time I saw a recipe for the rainbow cake was on this blog. I THINK I remember someone posting a link on Alexis’s side. Needless to say, it did NOT get a great response from Alexis. Wish you had a search feature here! I think it looks like a great project and something kids would love. Good luck!
Very good you are getting back into baking – and taking on a hard project! It’s just fun baking with your daughter – I know I enjoy it with mine! Have fun and post photos!
Go for it chickie! My grand-children say the best cakes I have made are the ones that I think bomb or are not the prettiest.
artificial food coloring is disgusting and unhealthy. use vegetable dyes instead.
The important thing is that you take the time to make her the cake she requested. It’s the sort of thing she will remember forever, Jennifer. You’re a good mom.
Oh I love a good rainbow cake… its like the classier big sister cake to Funfetti!!! In case you are looking for some quick reference here’s a pretty good one https://www.omnomicon.com/rainbowcake , oh also some fun music suggestions in case you were still looking from the last blog, Vampire Weekend (both albums are great but the Contra album is slightly better in my opinion), The Sounds (some pretty good girl rock for the gym), Hot Hot Heat (people usually love them or hate them cause of the singers voice), Dragonette… Enjoy the cake!
Oh, I just googled it, it is really cute! You can do it!
I’ve made a rainbow cake using directions from this site – it worked pretty well!

Good luck, I can’t wait to see pics of the cake!
here is a link for the most beautious photo of a rainbow layer cake and the recipie:

If you food color separate small batches of the coconut you can sprinkle it on the cake and it creates a rainbow/confetti effect. Kids love it despite the junkieness.
I am sure you will do great! Maybe you should do a practice cake and share it with your friends…LOL
I have never heard of a rainbow cake…… but it looks to be quite popular with all the responses here. Ill stick to the chocolate mayo cake that Alexis just posted. looks like it would be better tasting than the rainbow……what flavor is rainbow anyway……..
The fact that she asked for a cake, something she knows is out of your comfort zone, probably means that she wants to see how her mother deals with things she is uncomfortable with…get in there and fix the damn cake..your daughter wants to learn something from you..
What if your bebe girl does want to be a pastry chef dear mommy? You will bake.
You are such a terrific mom! And so gorgeous! I love you!!! YES, bake that cake!! Did I mention, that I worship you?
here’s another one…the frosting between the layers is tinted as well as the cake itself

Some people have sensitivities for red food coloring– too bad fruit could not be used well sure it can why ingest all those food grade dyes what about strawberries blue berries kiwi fruits candied lemon peel orange marmalade, grapes let me guess it just isn’t the same it is not the over processed junk food kids think they deserve. The most un natural food stuff is what the american kid thinks he/she should eat!!. When will the insanity stop I guess everyone has a rainbow cake in their life– I decorated a cake with dyed coconut to create a rainbow that was my limit coconut red coconut green etc. This so close to the heels of easter candy arg…. how can u cope
@JRT The flavor of rainbow is obviously magic flavored… ha sorry, it’s whatever you use as the base cake before you flavor, Ive made if using a simple run of the mill vanilla cake batter (also have tried same batter just with almond extract and another occasion coconut extract both pretty yummy) as a base and then you add the gel coloring to it. You can also use boxed mix and divide that all up and add the colors to that. Although a slight foodie I really do enjoy a good boxed cake mix! Also I highly recommend unless you are outright offended by it (which is slightly silly) try it with the boxed mix first to see how to do it, and then once that is mastered you can move on to making it with your own homemade batter.
You are a pretty good baker from what I’ve seen here, please post pictures. I would like to try it for my nephews.
now i want to make one for my daughter’s 2nd bday. i can’t wait to see how yours turns out.
Cool.

Tempt her with a pot o gold cake Jenn. Ya know yellow cake with yellow frosting. Easy peasy! 🙂
If I recall Alexis had that cake mentioned on her blog last year. It is AWFUL and the ingredients are probably the worst for any cake.
Jennifer – Kevin Sharkey posted this cake in his blog today…here is a link to directions on how to make one. Good luck and be sure to post pics!

The whisk-kid.blogspot.com one is the best.
Jen, the whisk-kid (Kaitlin Flannery) is going to be taping on Martha’s show in Tuesday.
Jennifer, I hope you and your daughter have a great time baking together.
The cake looks great on your tweet – post a pic here!
That is one labor-intensive cake but you did a good job. The iMovie skills are coming along – good edits, nice lolcats font..and go on wichoo bad audio fading self!
I saw a rainbow cake somewhere that would have been a bit easier. Instead of making full size layers of each color they divided that amount of batter into 3 pans making the layers much thinner. Easier to cut and serve too. Maybe next time?
Doesn’t matter if its a disaster!! The fact is she will love that you did it. Priceless!!! Good luck!
So, did you make the cake, and if so, how did it turn out?
