my daughter asked if i would bake the rainbow layer cake with coconut on top…didn’t even know where it was from! (she had a picture on her computer sent from a friend) googled it…found one that was adapted from a dorie greenspan book…i think?!
i will try it next weekend.
because she asked me to.
and i have not been baking at all.
maybe it’ll even be fun.
and even if (when!) the cake is a complete disaster, at least she will see my attempt.

be sure you use gel food coloring. it will be brighter than liquid food coloring.

I think the first time I saw a recipe for the rainbow cake was on this blog. I THINK I remember someone posting a link on Alexis’s side. Needless to say, it did NOT get a great response from Alexis. If you food color separate small batches of the coconut you can sprinkle it on the cake and it creates a rainbow/confetti effect. Kids love it despite the junkieness.

Some people have sensitivities for red food coloring– too bad fruit could not be used well sure it can why ingest all those food grade dyes what about strawberries blue berries kiwi fruits candied lemon peel orange marmalade, grapes let me guess it just isn’t the same it is not the over processed junk food kids think they deserve. The most un natural food stuff is what the american kid thinks he/she should eat!!. When will the insanity stop I guess everyone has a rainbow cake in their life– I decorated a cake with dyed coconut to create a rainbow that was my limit coconut red coconut green etc. This so close to the heels of easter candy arg…. how can u cope

@JRT The flavor of rainbow is obviously magic flavored… ha sorry, it’s whatever you use as the base cake before you flavor, Ive made if using a simple run of the mill vanilla cake batter (also have tried same batter just with almond extract and another occasion coconut extract both pretty yummy) as a base and then you add the gel coloring to it. You can also use boxed mix and divide that all up and add the colors to that. Although a slight foodie I really do enjoy a good boxed cake mix! Also I highly recommend unless you are outright offended by it (which is slightly silly) try it with the boxed mix first to see how to do it, and then once that is mastered you can move on to making it with your own homemade batter.

I saw a rainbow cake somewhere that would have been a bit easier. Instead of making full size layers of each color they divided that amount of batter into 3 pans making the layers much thinner. Easier to cut and serve too. Maybe next time?
