made delicious granola today with no added fat (meaning no oil…ofcourse there is fat in the almonds!)…maybe bake it longer than i did if you like it extra crunchy!
ingredients:
2 cups organic almonds (coarsely chopped or not)
5 cups old fashioned rolled oats
1 cups raw but rinsed organic quinoa
1.25 cups brown sugar
.5 cup water
1 tsp salt
3 tst vanilla extract
1 cup organic dried cranberries
1 cup organic raisins
3/4 cup organic dates (the kind that are pieces coated in oat flour)
pre-heat oven to 275 degrees.
line 2 cookie sheets with parchment paper.
take the brown sugar and water and microwave for about 5 minutes till all sugar is dissolved.
in a big mixing bowl combine the oats, quinoa, and almonds.
once the sugar mixture is dissolved, add the salt and vanilla to that mixture..then pour the mixture over the oats, quinoa, almond mixture and mix well to coat all of the mixture.
divide the mixture between the 2 lined cookie sheets and bake for at least an hour.
when the granola seems done enough to you (dry and toasted!)… remove it from the oven and transfer to mixing bowl in batches to add in the dried fruit little by little (when it is ofcourse cool enough to do so). and obviously you can add any dried fruit you want (or don’t add any!)
it is so yummy!
